fuck i have to give you a boring answer first. you know i live in an apartment. my fridge is functional and it’s ~fine~ but my honest answer would be a double-door fridge with a freezer drawer underneath and lots of drawers and shelves inside and an ice/water dispenser because honestly my current fridge just!! does not!! have enough space for me to organize my food. ugh.
but the ~fun~ answer? an espresso maker with a milk steamer wand. i could probably buy one on amazon for cheap but i would really want one of the really nice ones that are more expensive. i need lattes. :)

Day 22...condiments are FUN!!
Going into the whole30 I was sure the most challenging aspect of this program would be the lack of “off the shelf” condiments. I am the queen BAE of ALL the condiments. I mean, I put ketchup on my ketchup. My friends understand I need a full bottle and send me ketchup meems regularly. So this no sugar added condiment life was a whole new chapter for me. I’m scaredddddd, I thought going into this.
With that fear, I took condiments head on. What can I make throughout this journey to keep my food exciting, tasting amazing, and get creative. I’ve utilized the whole30 recipes for some and went off the map for others. From ketchup, to roasted red pepper sauce,to BBQ sauce, to mayo, ranch, beet hummus, and cashew “cheese” my meals have been NOTHING but exciting!
A really proud moment in my whole30 journey was nailing the mayo followed by ranch (pictured above). My first attempt at the mayo, I thought I nailed it and just assumed that it was supposed to taste different than store bought mayo. It was very olive oily, but I ate it anyways. Ok round 2, I actually bought the lite olive oil – THIS IS KEY PEOPLE! Whipped and creamy and BETTER than store bought mayo. I will actually never purchase mayo in the store again.
Andddd what’s better, I can take that mayo and create Ranch, Oh OK! Now, whole30 has a ranch dressing but I made mine with a twist. Once again, I like some zing to my food so I added chili powder, red peppers, and a dash of cumin. Zesty ranch, amazing! I love the coconut milk base, the texture is perfect, and doesn’t feel too heavy (plus it’s guilt free). Even better, I have a mini mason jar of the spice combo leftover for later.
Now, an ultimate success was the cashew cheese! Let me start by saying I am not craving cheese at all so this is not a substitute, this is simply me trying to invent new ways to add some fat to my problem. So hence the creation of TRUFFLE CASHEW “cheese” cameto fruition.
This recipe takes some prep so if you are liking the sound of it, go buy your cashews now!
1. Soak 2 cups of raw cashews overnight 2. Drain cashews and place in a blender or food processor. I used my ninja blender and it worked great. 3. Add 2 tablespoons of lemon juice, 2-4 tablespoons of water (start with less and add more after blended if needed), 3 tablespoons of nutritional yeast, 1 tablespoon of truffle oil, ½ teaspoon of truffle salt (you can use Himalayan salt as well I just prefer things very truffley), teaspoon of pepper, and any fresh spices if you prefer (I added as wanted depending on the recipe) 4. Blend until smooth (the consistency will be similar to ricotta cheese) 5. Top with a little more truffle oil (yea I’m obsessed) 6.Chill and serve!
